Hi,

how can I add text between form fields, that i do not want associated to a field - for example, three paragraphs of a declaration?

While not exactly "between form fields", you can add a "paragraph field" with "none" in the label position parameter.  In my implementation, this gives me text in a box over a grey background.  That might be just the thing to set off a declaration.  Good luck.
