Removing option of specific dates on dates pickers

I have a small site with a couple of forms where I need to restrict the dates that a user can choose.  i.e. I want to make it so that you cannot choose weekends or holidays - I thought I saw somewhere some code snippet to add but I can't find it again.  Can anyone help me with that?
